Capture Italy between slices of bread!

In Italy, the caprese salad is a classic. It represents three of Italy’s most beloved ingredients, and even shines brightly in red, white, and green, the color of Italy’s flag! Because the caprese salad is so beautiful, it can be easy to forget how simple it is to make. Just combine tomatoes with mozzarella and basil and top with extra virgin olive oil. The beauty of Italian cooking is that it takes no more than a few perfectly combined ingredients to create a dish that is truly spectacular.

But how do you make the unsurpassable caprese salad a real meal? Turn it into a sandwich, of course! We’ve made some modifications to the original caprese salad recipe in order to make a truly great sandwich. First, we slice a fresh tomato for that tangy, juicy, earthy tomato flavor. Then we add mozzarella cheese. We’ve chosen to use a low-fat version, to cut down on both fat and calories. And instead of adding whole basil leaves, we’ve used a basil pesto to add a bit of moisture to this sandwich recipe. Whole grain bread is the perfect complex carbohydrate to fill you up and keep your energy stable throughout the day.

Serve this healthy sandwich for lunch, or in small slices at a party. It tastes like a gourmet treat, and no one will guess just how easy it was to prep, or how healthy it is!

Italian Caprese Sandwich

This sandwich is made with healthy classic Italian ingredients that will put a smile on your face.

Ingredients

  • 4 slices tomato
  • 4 slices mozzarella cheese low-fat
  • 1/4 cup basil pesto
  • 4 slices whole-wheat sandwich bread
  • 1 tablespoon olive oil

Instructions

  • Slice each piece of bread in half. Spread the olive over the 8 halves. On 1/2 slice of bread, spread one tablespoon of pesto then top layer mozzarella and tomato. Add the other half of bread on top.
  • On a lightly oiled griddle or large skillet, cook both sides until the mozzarella melts and bread is lightly toasted. Serve immediately.
